    Really good. Not many other recipes out there that dress up tinned beetroot (a big fave in our family). I used the processor to give paper thin shavings of red onions, and almost as thin strips of green capsicum - a variation on the recipe's technique. I also added rocket because the veggie patch is bringing forth a bumper crop. It works well. The dressing is interesting - I estimated and unfortunately got the balance wrong - not enough lime and too much garlic.
