Tim's banana bread from My Feast with Peter Kuruvita: Recipes from the Islands of the South Pacific, Sri Lanka, Indonesia and the Philippines by Peter Kuruvita

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Makes a lot of batter. I made two large loaves from this recipe.

Update on note from Feb 23, 2019. The problem is my oven, not the recipe.

Lots of sugar, lots of oil, and then add butter! Not for dieters. Certainly knocks off a large quantity of bananas if you have to use them up. Very easy quick mix cake. I prepared this for a loaf tin, and found the amount of batter called for a square tin. A lovely cake with deliciously caramelized surface and corner pieces. (I opted out of the rum syrup finish.) The centre of my cake remained so moist it was technically under-cooked, so go for longer in the oven even if the skewer test suggests it's done. Once the edge pieces of the cake have been enjoyed, we will try slices of the over-moist centre on the sandwich press.
