    Recipe calls for the use of a pressure cooker. Can substitute black beluga or other firm lentil for French green lentils, and volcano or Mekong Flower rice for brown rice.

    This is a recipe I've repeated several times. I often vary the vegetables depending upon what I have on hand, and I play around with the mix of herbs as well. The timing on this recipe is perfect to get the lentils and rice tender without being mushy.
