Moroccan-inspired scallop couscous, asparagus and rocket salad from Taste Magazine (NZ), November 2013 (#96) (page 57)

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

There are a couple of other Moroccan scallop recipes in the database, so it isn't completely unheard of, but this recipe nevertheless is a good one if you are looking for something different. (Does Morocco have asparagus? Or rocket?) The asparagus in the recipe is cooked only by the hot chicken broth in which it (and the couscous) soaks, and I thought it could do with a smidge more cooking. I also used a light hand with the spices when searing the scallops, as I didn't want to overwhelm their (expensive) sweet flavor. Overall, I'd say a good/very good recipe.
