Recipe calls for the use of a pressure cooker. Grain must be pre-soaked. Can substitute shallots or leeks for onions, dried shiitake mushrooms or other wild mushrooms for fresh shiitake mushrooms, farro for barley, and your favorite miso for barley miso.
