    Can use "Homemade Broth" (using chicken) recipe on P72 for store-bought chicken broth; sugar for grape molasses; a mix of orange and lime juices for sour orange juice; and almonds or hazelnuts for pistachios. For a vegetarian version, substitute vegetable stock for chicken stock. See recipe for variations.

    Needs abundant salt and might need extra orange juice and lime but when you get the proportions right, this dish sings.
