    A delicious potato salad, the corn is a really nice addition. Poblanos are really hard to find here so I substituted jalapeños (from my first successful plant) which gave the salad pops of heat and great flavour.

    Excellent Mexican side dish and different version of potato salad. We all really liked it alongside barbacoa tacos today.

    This is so fantastic! A nice Mexican-ish twist on a classic version of potato salad, and I LOVED the addition of sweet corn.
