Carrot and ginger soup with cucumber raita from A Change of Appetite: Where Healthy Meets Delicious by Diana Henry

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

A very very carroty soup, and in a good way. The description of ingredients left something to be desired, for instance "10 carrots" is not very helpful. I ended up using around 830g prepared carrot, increased the garlic to three, and used 20g fresh ginger (too much - next time would cut in half). Henry instructs to either juice your own carrots or replace it with stock or water, which I find a bit ridiculous - cold-pressed store-bought carrot juice would still provide a far more intense - and better - flavor than those subs. Using stock or water instead would have greatly dulled down the soup. I easily got six servings out of this with the amount of carrot I used, and it would make a lovely starter soup for eight people.
