    I'll spare everyone my trials and tribulations of trying to cook squid for the first time. At the end, this was a great-tasting dish, but it'll be a long time before I sign up for dealing with 2 lbs of squid again (already mostly cleaned, even). I roasted the bell peppers (unoiled) in a 450 degree toaster oven and peeled them; reduced oil in tarator to 1/4 cup and added maybe 1/2 tsp salt; skipped cooking the freekeh with oil; tossed cooked freekeh with 1/2 T oil; and doubled the amount of spinach.
