Rasta pasta from A Taste of The Tropics: Traditional & Innovative Cooking From the Pacific & Caribbean by Jay Solomon

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute angel hair pasta for linguine pasta; and pumpkin, butternut, or acorn squash for calabaza.

It's long been in the back of my mind to give this pasta recipe a try, and I finally had all the ingredients on hand (though I did substitute cauliflower for broccoli) and was in the mood for it this past week. Enjoyed it quite a bit, though I'm glad I made more pasta than the recipe called for (more like 10 oz instead of 4 oz) as it makes a LOT of sauce. Husband was skeptical at first but ended up enjoying it too. A very filling vegetarian pasta meal.
