    I have made this loaf a few times. over the years. I adjust seasonings and topping amount to our liking (more!). Used horse gram lentils this time because I was out of regular brown. Horse gram are the highest protein lentils (mainly used in Indian cooking) and have a bit of a unique earthy/nutty flavor but they worked perfectly and made my protein loving teen happy. He ate 1/2 the loaf within 24 hours! The recipe has GF variation too so it's a great option for hosts wondering what to feed their vegan/vegetarian/GF/dairy-free guests.
