    Delicious! My eggplants were kind of fat so I broiled them for 60 minutes, turning every 20 minutes to get them good and charred. Cut the garlic back to 1 clove since I’m not a huge raw garlic fan and it was a nice hint without overpowering. Also cut the olive oil back to 1/4 cup. Will gladly make this again and again.
