    Quick Brussels sprout dish. The pancetta and balsamic were a good combination. I added roasted garlic and fresh garden thyme. Quite nice, will make again. I used balsamic reduction. Next time I will use the really good aged balsamic which I think will have a more remarkable flavor.

    The sprouts were crispy and tender and slightly sweet from the balsamic, which made them that much better when I got a bite with the salty pancetta. They're gorgeous, too...
