Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Okay, so it turns out that if you leave the quince purée evaporating for several days before you get as far as processing it through a sieve you in fact get a very *soft* set, contra the commentary in the recipe -- but it's still tasty! Definitely not my favourite of the Ruby Violet ice creams, but I'm very glad to have tried it.
