    This is essentially a risotto, fine for a lazy weekend morning but not quick. Veg can be chopped while rice starts cooking. 1 aubergine and 1 punnet cherry tomatoes made half recipe (2 portions). Filling but not as tasty as I'd hoped, next time taste before adding balsamic vinegar, it seemed to overpower it along with brown rice? Portion sizes generous. Might try different version next time.
