    These took several tries to get right--my first batch too big, my second batch I burned the edges before the middle was done. Take the advice in the directions-- make them small, like silver dollar pancakes, and very gently flip them. My best batch was made over low heat, covered the entire time, 5 minutes per side. Otherwise they will not be cooked thoroughly all the way through. I picked this one because I wanted a dairy free (sans buttermilk) recipe.
