Grate an apple into yogurt fold in the oats sweeten with honey put in the fridge - makes a kind of mueseli

  • Blueberry oat pancakes

These took several tries to get right--my first batch too big, my second batch I burned the edges before the middle was done. Take the advice in the directions-- make them small, like silver dollar pancakes, and very gently flip them. My best batch was made over low heat, covered the entire time, 5 minutes per side. Otherwise they will not be cooked thoroughly all the way through. I picked this one because I wanted a dairy free (sans buttermilk) recipe.

  • Banana muffins

    • pennyvr on September 09, 2014

I put nowhere near the amount of flour listed in the recipe, because it seemed too dry. The muffins turned out quite stodgy.

  • One-pot pasta

Have made this several times now. It's a quick and easy meal that easily feeds a family of five with enough leftovers for lunch the next day. I use what's on hand and usually include some meat and low salt chicken stock as just water is bland. Last night it was 1/2 lb ground pork and onions, eggplants, tomatoes, zucchinis, chile pepper, and tomatillos all from our garden. They all asked for seconds!

This turned out soupy for me, and with the pasta already in the sauce there no way to just let it simmer and reduce. I love the idea though so next time I'll start with 3 c of water and work my way up if needed. Probably add lots more kale too.

Publishers Text

For families, eating right has become a monumental challenge. Cultural messages convince us that we no longer have time to cook, and food marketers spend billions persuading us that packaged, processed food is convenient, satisfying...and the key to happiness. Half of all our meals are now eaten outside the home. The result? Skyrocketing rates of heart disease and diabetes and unprecedented levels of childhood obesity. This crisis is movingly portrayed in author and activist Laurie David's new documentary (co-executive produced with Katie Couric), Fed Up! Luckily, we have a solution: Studies have clearly shown that eating home-cooked meals reduces obesity and develops lifelong healthy eating habits. There is an exciting movement afoot that involves a skillet, a few good knives, and some fresh ingredients: Home cooking is making a comeback.
