    Yes, I'm experimenting with vegetable patties/latkes. There was no chance that potato/roasted garlic wouldn't be a big hit. So I split the recipe in half and used black garlic in one half. This may not be the best use of black garlic but the contrast between the roasted garlic and black garlic was worth repeating. Vegetable oil? You're kidding - bring out the schmaltz. I served with sour cream rather than applesauce.
