Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Have made this a few times now, also as muffins, and it's not bad, but I think the amount of carrots needs to be increased, and the coconut flakes decreased. Also usually add chopped walnuts to the mix. Could also do with some orange zest in the cake mix to justify calling it a "carrot and orange cake" (in the recipe the orange is in the frosting). It's certainly not a bad cake, as muffins they freeze and defrost really well, and I'll probably make this recipe again - with the above adjustments - when I'm after an easy carrot cake recipe. Can't comment on the frosting, as I haven't made that one (yet).
