    Loved the sandwiches. We already had leftover hummus and thought to try this out. Did not have any tomatoes and pickled mango. It still tasted really well. I had broiled the eggplants the night before and peeled and sauteed it with a little Olive oil and salt the next day. It tastes great warm but will be good cold as well. I served it with mango chutney since did not have pickles. It tastes good with or without. The kids loved it too.
