    I make this salad several times every summer during the height of tomato season. For such a simple preparation, it is absolutely delicious. And lovely, especially if you use both red and yellow tomatoes. High quality EVOO is essential. Today I made it with some locally-made chevre that I bought at my farmers market yesterday, in place of the burrata. I think I may like it even better with the chevre. The recipe says that you can substitute plum tomatoes -- personally, I wouldn't do that. I just can't see how that would be nearly as good.
