Chicken and coriander samosas from Made in India, Cooked in Britain: Recipes from an Indian Family Kitchen (page 51) by Meera Sodha

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute turkey mince for chicken mince.

Fantastic flavour, though not very spicy (hot) because of the chili powder and pepper I used. They were particularly good with the sweet and hot tomato chutney.

When I first tasted this filling, I thought the flavor was too harsh. But I have to say, once it is wrapped up into a samosa, it's perfect! The butter filo wrapping contrasts the spicy acidity of this filling perfectly. What a win. We ended up with a little extra filling which my boyfriend ate over rice for lunch, and he said that was delicious as well.
