Roasted butternut squash curry with garlic and tomatoes (Lasan, tametar anna kaddu nu shaak) from Made in India, Cooked in Britain: Recipes from an Indian Family Kitchen (page 61) by Meera Sodha

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This is a solid dish, pretty quick to make. I added a can of chickpeas at the same time as the tomatoes. Served with basmati rice. The suggested raita is a yummy addition. Made 4 servings for me with the beans & rice.

The skin on the squash was tough while the rest of the dish was mush. Not my favorite.

Really great- definitely make the garlic raita. I think it needs some kind of protein element. maybe chickpeas?

Delicious! I bloomed the spices in garlic oil before cooking the onions, otherwise I followed the recipe. A great vegetarian dinner.

Well, I am not even sure that I should comment on this because I only half made it. I was making it along with the Salmon with Spinach and the Simply Spiced Spring Cabbage. Both of these recipes had onions and tomatoes so after I made the paste and decided that I wouldn't add the rest. I served with the Riata as suggested and it was perfect. I can't wait to try again and follow the full directions.

This was good but we didn't love it. We are not squash lovers so that may be the problem.

Lovely curry to go with the cauliflower cashew and pea curry from the same book. I left the skin on but will remove in future. The oven temperature may need to be a little higher to achieve the requisite caramelisation. I had mine a 200 Celsius fan forced and it was just right.

Nice dish. Would make a good side with roasted lamb.

  • TrishaCP on March 17, 2018

This was very tasty. I didn't like the idea of butternut squash pieces with the skin left on, so I cubed the squash and roasted it for approximately 20 minutes.

Very easy and delicious recipe. My SO objected to the skin left on, otherwise it was pretty solid. Top honors in the family go to Jerusalem roasted squash recipe with tahini sauce.
