    In the summer of 1999 I had an over-abundance of tomato plants (if there is such a thing!) and was constantly on the lookout for good tomato recipes. This recipe was published in the July issue of BA and it was a winner. As a lover of horseradish, I especially liked the nice bite it provided. And the chipotle cream added a nice, smoky accent. I've continued to make this at least once every summer since then as it's a perfect summertime dish.
