    Can substitute basmati rice for long grain rice and cayenne pepper for green chillies.

    This is a relatively simple recipe (despite the long instructions) but resulted in the best rice I've ever made. Don't skip soaking the rice, it really makes a difference! I made it in a small cast iron pan which meant it was easy to transfer to the oven. Lovely.
