    We loved these and would definitely make them again. I halved the recipe since there were two of us, and we had leftovers for lunch the next day. The dish is easy to make, but next time I would try to cut up the vegetables in advance, as that made the total time run long for a weeknight. Also, I was very liberal with the kosher salt and pepper on the chicken and even more so on the veggies, but it still was a little bland, so I'll go even heavier on them next time.
