Soak dried cannellini beans overnight. Can substitute dried white kidney beans for dried cannellini beans, the book's "Codillo en salmuera (Brine-preserved pork shank)" or "Hueso (bones) salado" for ham bones, the book's "Panceta curada" for pancetta, and the book's "Butifarra fresca" for butifarra sausages.
