Can substitute pork bones for beef bones, beef brisket for beef shanks, vermicelli pasta for fideos noodles, the book's "Cantimpalos-style chorizo" for Spanish chorizo sausages, the book's "Morcilla de arroz" or Morcilla de cebolla" for morcilla de cebolla, the book's "Panceta curada" or the book's "Jamón" for pancetta, and chicken feet or chicken wings for chicken bones.
