    Can substitute Anaheim chiles for Hatch chiles.

    I used shredded Mexican-style cheese blend because the store was out of any form of Monterey Jack. The Hatch chiles made this a bit spicier than I expected. Otherwise, really, really good. Next time I might substitute poblanos - especially when fresh Hatch chiles are not available.
