Spiced pumpkin pancakes from The Bon Appétit Fast Easy Fresh Cookbook by Barbara Fairchild and Bon Appétit Magazine Editors

  • maple syrup
  • vanilla extract
  • canned pumpkin purée
  • pumpkin pie spice
  • store-cupboard ingredients

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

The recipe is more work than most pancake recipes because you have to beat the egg whites and fold them. However, it's really important because it makes the pancakes lighter and not so dense for all of the pumpkin in it. I found 1.5 minutes per side was not enough and had to cook it longer to get it to cook through
