    Pretty good kale caesar! The anchovies I used were different than I usually buy, more pickled than salty, which made the dressing maybe a touch more acidic than I need it to be. I had trouble caramelizing the onions evenly without burning some edges with the recipe's oven method, not sure it has any advantages over using a pan. I used feta instead of ricotta salata.
