    Can substitute agave syrup for brown rice syrup; and brandy, or rum for grappa.

    Pg 31 - this is a very easy cake to make - I made a few substitutions such as using spelt flour instead of white and cutting down a bit on the oil and finally I used less rice syrup and added a little stevia to make up the difference. I also baked mine in a loaf tin/pan as that is what I had to hand at the time and it turned out beautifully. The crunch from the nuts and figs is a really nice touch. Plus the kick from the Grappa is (of course) delicious! Definitely will be making this one again.
