    This was really good. I did modify, omitted pine nuts & mushrooms (didn't have any), substituted 1/2 & 1/2 for the heavy cream, added diced fresh mozzarella cheese to the sausage/onion mixture while I waited for the quinoa to finish steaming. I cooked the quinoa in chicken broth. The filling was rich, but the sausage/quinoa/cheese mixture was really flavorful and filling and honestly I didn't miss the mushrooms at all. Overall prep was fairly easy and this is certainly doable on a weeknight (especially if you already have prepared the quinoa). Served with a large green salad.
