    I love this dish and have made it many times. My recipe is from the old Panna app but the BA recipe looks about the same to me. I find that four serranos is too many because there’s so much flavor and I’m not a fan of blowing out my tastebuds. My advice is to start with two serranos. Also, definitely abide by the low sodium soy sauce. I like to eat it over coconut rice.

    From Naomi Pomeroy via Instagram in May 2020: “Two pro-tips: 1) Marinate for 3 days instead of 1-2 2) Cook in appropriate sized vessel so the thighs are packed in, all marinade is below skin, and (1/4 inch sliced) lemons are buried under the thighs themselves, but the skin is exposed. Cook at 375 until you love the color of the skin and it feels crispy. I like to drain off the fat at the end, rewarm the thighs on a rack and serve with the sauce over rice. This works on the grill too, but it likes a low low even heat... ps. Eat the lemons, or even chop into the rice.”
