    I used this as the basis for a meal from what was in the fridge. I tossed the miso butter with the noodles, lightly stir fried carrots and onions, and tossed in leftover pork roast. Topped with some matchstick cucumber. Surprisingly good, husband said it was a definite do again.

    I've made this before as written (although with extra vegetables added) and it was very tasty, although there was barely enough liquid to cook the soba, which kept sticking to the pot. This time I made 1/3 recipe just for myself, using one boneless, skinless chicken thigh, but still using 3 cups broth, so the soba didn't stick so much, but still was super flavorful. Red miso worked fine. Instead of scallions, bean sprouts, and cilantro, I added matchstick pieces of carrot, cucumber, red bell pepper, and snap peas.
