Pistachio and saffron kulfi (Pista kesar kulfi) from Made in India, Cooked in Britain: Recipes from an Indian Family Kitchen (page 244) by Meera Sodha

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This is an astonishingly good recipe! The mouthfeel is absolutely perfect and the pistachio and saffron marry perfectly. Best of all is the ease of cooking. Grinding the nuts is the hardest, most time consuming part of the whole recipe. I can't wait to try other variations!

Works great in popsicle molds! Highly recommend a spice/coffee grinder for the ground pistachios.
