    Made this recipe for my husband for Valentine's Day (our anniversary). This one has a number of components but makes for a special occasion. A fork with a bite of each (sweet potato, caramelized onions, spinach, egg, and cashew/avocado sauce) is a delight. We ate three servings but ended up with a ton of extra caramelized onions and sauce. One onion would have been plenty. As for the sauce, it took more than "seconds" in the food processor to achieve "creamy" along with a fair amount of water. I agree that it is "super-light" but I also found the flavor bland and I am not compelled to use the sauce other ways as suggested by Anna. Not sure if this blandness is due to the water needed, or maybe I should have added the whole avocado instead of half or possibly my "small handful of cashew nuts" was too small. Bottom line: A yummy special occasion meal that will not be on repeat in our household.
