Pad Thai with shrimp (Phat Thai kung sot) from Simple Thai Food: Classic Recipes from the Thai Home Kitchen (page 123) by Leela Punyaratabandhu

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute dark brown sugar for palm sugar, and green onions for Chinese chives.

This is a great, traditional Pad Thai recipe with detailed cooking instructions that I found very helpful. I loved her suggestion to use a large cast iron skillet instead of a wok and found it very easy to cook the noodles in the sauce on one side while cooking the other ingredients on the opposite side of the pan.
