    I used hot smoked salmon instead because we cannot get mackerel where we live. I added a mixture of mascarpone cheese with horseradish cream to the mayo and it really enhanced the flavour. I had some guests for dinner and they all commented how delicious it was.

    My husband loved this; I'm on the fence. I couldn't taste the cornichons and dill at all - I would have upped the quantities of both, but I'd run out. For me it might just as well have been smoked mackerel and some mayo.
