    Substituted arborio rice and skipped the parsley but agree that this recipe is packed with flavor. I trusted Anna and did not stir the rice even once but I did add 5 minutes for fear that my substitution might create crunchy rice. Not sure if it was needed or not but the rice was just perfect - and this recipe came together quick in one pan just as Anna promised.

    I'm making the most of being in lockdown and trying out many recipes I have marked to try in a selection of my cookbooks. This is absolutely packed with flavour. The recipe was faultless. It is my favourite paella EVER! I could not stop saying "Mmmm" every time I put a forkful into my mouth. It is going to be a something to make for a dinner party one day.
