    Good use of leftover sweet potatoes, but I wouldn't make them otherwise. My potatoes were very thick so the pancake batter was also quite thick and needed to be spread in order to cook through. Definitely cook these low and slow - the centers remained wet longer than I realized at first. I upped the spices as my potatoes were not already spiced. Nice flavor, enjoyable breakfast topped with maple syrup and a dollop of leftover whipped cream. We got 4 servings.

    A nice idea for using up leftover sweet potatoes. Not too sweet, and the spices hit the perfect note. Really good with bacon.
