Cranberry & pear tart from Jamie Magazine, December 2014 (#54) (page 80) by Anna Jones

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute walnut or almonds for pecans, water for apple juice, and coconut yoghurt or vanilla ice cream for crème fraîche.

The headnotes describe this as a "flapjack-style tart", and as I don't have a food processor to pulse the dry ingredients, I decided to just aim for a flapjack. It tastes quite nice and is very filling, but doesn't look at all like the picture (and using whole oats/nuts instead of ground can't be the sole reason)! The chia seeds didn't bind well with the cranberries and I found them a bit off-putting as a separate layer on top of the apples (used instead of pears). As I quite like the taste of the flapjack I'll probably tinker with the topping ingredients a bit to see if I can make this work for us.
