    Page 65 - I made this with rhubarb recently, I just tossed the rhubarb in a little sweetener before topping the tray bake. It's a very easy recipe to make and the batter puffs up and stays beautifully light which isn't always the case with vegan cakes I've found. This makes a pretty big cake but it keeps well in the fridge.
