    This tasted nice enough but despite the number of chillies involved and marinating the chicken for 24 hours, the end result wasn't as full of flavour as I'd expected. I had more marinade than I needed for the quantity of chicken I was making, so I froze it and we will therefore be having this again, but I'm not sure I'll bother making the marinade again. Not having banana or avocado leaves I made parcels for the chicken from parchment paper and this worked well.
