    Tasty recipe that appealed to me because I had everything on hand and didn't need to go grocery shopping. I made the sauce a day in advance for convenience. Easy to make and tasty. I ended going back and making more of the apricot sauce (easy - stir some apricot jam into the chile sauce) mid-way through the meal as there was nowhere near enough. Left-overs will make lovely tacos tomorrow.
