Japanese sweet potato and cauliflower frittata from A Good Food Day: Reboot Your Health with Food That Tastes Great by Marco Canora and Tammy Walker

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute sweet potatoes for Japanese sweet potatoes.

Used the wrong skillet and it was a bit of a disaster trying to coax the frittata out of the pan. Also need to use care when cooking the cauliflower and sweet potatoes as not all pieces cooked evenly (a few tough/semi-raw bites). Even though the final product had issues, we still liked the overall taste and would try it again.
