    Quick and easy oven-fried catfish for a weeknight dinner. Cut the recipe down by 3/4 since I was only baking 2 fillets. Skipped the butter and just used cooking spray to help the cornmeal crust brown in the oven. Served with butter beans, rice, and a tomato salad.
