    3.5 stars The kelp noodles were still a little crunchy after being soaked along her directions. This recipe was good overall but didn’t taste much like Pad Thai, mostly because it uses almond butter instead of peanut butter. But it tasted good. I wasn’t so in the mood for something cold, though, and it wasn’t filling enough, so after having some cold, I marinated tofu cubes in a little soy sauce, then added them, along with cooked rice, to my bowl, and heated the whole thing in the microwave for a minute. The kelp noodles softened some and in general it was nice to eat something warmer and more substantial. Less unusual but more enjoyable, at least this time of year (autumn).
