Corn nut cornmeal shortbread from Cookie Love (page 51) by Mindy Segal and Kate Leahy

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Same as past review from 2016, couldn’t get the Corn nuts to grind fine. I like the resulting texture but the cookies were tricky to cut out, crumbled easily. It’s a not too sweet cookie with great savory/salty hints and crunch. My favorite cornmeal cookie is still Joanne Chang’s cornmeal lime cookie from Flour.

I could not, for the life of me, get the corn nuts to grind to anything like the texture described in the instructions and I began to fear for my food processor. However, I went ahead with my too-chunky corn nuts and the cookies tasted great, so I'm going to keep making them and not worry about it.
