    I scaled this to 1/4, adding strips of roasted jalapeno with the poblanos & used heavy cream (given as a substitution). Later in this section, he turns this mix into a simple sauce by blending it smooth using water for thinning but instead I added a splash of pickled pepper brine with the salt & we loved the flavour it gave. We spooned this sauce over grilled chicken breasts and it was lovely.
